VR Cab Onions
- 1 tbsp extra-virgin olive oil
- 6 large red onions (julienned thin)
- 8 ozs dark brown sugar
- 1/2 bottle Vina Robles Cabernet Sauvignon
- 16 ozs balsamic vinaigrette
- 3 large rosemary sprigs
Heat oil in a wide-based heavy skillet over high heat. Add onions and sauté for about 5 minutes, stirring often. Reduce heat to medium and cook until soft and lightly browned, stirring occasionally, about 10 minutes.
Add remaining ingredients and stir until combined. Reduce heat to medium-low and cook until onions form a dark red wine caramel color, 20-30 minutes. Remove from heat and discard rosemary sprigs.
